Working with a professional chef can have its advantages. I get to ask Chef Robey all kinds of cooking questions and turn what use to be a rather dull meal at my house into something quiet wonderful. We would like to start featuring more of Chef Robey’s tips and tidbits, so once a week we will have a blog entry answering your cooking and kitchen questions for Chef Robey. Take advantage of this awesome opportunity and find out some kitchen secrets, great ways to spice up your food, what spices you should have in your kitchen, anything food related!

Veranda on Highland has been honored to be the home of The University Club for faculty members from UAB, Birmingham-Southern College, Samford University and Miles College
The concept of the Club is inclusive ~ all faculty members and senior staff (active and retired) from Birmingham’s higher education community are invited to join. Centrally located on Birmingham’s Southside, we see The Veranda on Highland as the perfect gathering place for a wide variety of “members-only” events, our very own University Club, where you will always be recognized, welcomed and comfortable, where you can network and meet and greet colleagues, new and old, from your institution and all of Birmingham’s excellent academic institutions. Whenever possible, the Veranda on Highland will be happy to accommodate University Club members for any occasion, from lunch with colleagues to a small, private family gathering.
The founding annual membership fee, if you join before December 31, 2011, is $100 for senior faculty and senior staff and $60 for junior faculty; thereafter, the fees are $125 and $85, respectively.

Richard Leigh Music Night

Richard Leigh has been an icon of the music world since his first hit, Crystal Gayle’s “I’ll Get Over You,” went to #1 on Billboard’s Country Chart in 1976. Two years later he received his first Song of the Year award from the Country Music Association for “Don’t It Make My Brown Eyes Blue,” also recorded by Gayle.
To date, Leigh has made fourteen trips to the Top Ten and has written or co-written eight #1 singles, including “Somewhere In My Broken Heart” (voted 1991 Song of the Year by the Nashville Songwriter’s Association and “Best Country Song” by the Academy of Country Music Grammy Awards), and “The Greatest Man I Never Knew” (nominated at the 1993 Grammy Awards for “Best Country Song”).
In 1978, then Nashville Mayor Richard Fulton presented Leigh with The Key to the City. In 1988 he was honored with a space on the NARAS Starwalk. One of his greatest honors came in 1994, when his peers elected him into the Nashville Songwriter’s Hall of Fame.

Veranda on Highland loves to support the farm fresh local produce from within our community. Keeping it local insures wonderfully fresh ingredients and supports the efforts and goods of farmers, foragers and entrepreneurs within our fine state of Alabama. Using produce from Petals from the past, Jones Valley Urban Farm, and Averiett Branch Farms to name a few, continues to inspire the workings of our Executive Chef, Tom Robey.
There is nothing finer then farm fresh, organic, local produce.

On Saturday January 29, Veranda on Highland had the privilege of hosting the Burr Forman Yearly Party. With 310 guests at our beautiful home, Chef Robey produced an amazing combination menu of stations and passed hors d’oeurves. With a lavish Seafood Bar including Alaskan King Crab Legs, Boiled Gulf Shrimp, Marinated Crab Claws, Hackleback Caviar and Shucked Oysters.
Our servers passed Lamb Lollipops, Crab & Corn Beignets, House Made Boudin Balls, Seared Tuna Canape, and much more, leaving our guests with nothing wanting. Great Weather, Great Food, Great Wines and Wonderful Guests made for a fantastic evening at Veranda on Highland.

Veranda on Highland is very excited to announce the opening of our new ‘Papa’s Bar.’ On Monday November 15, 2010, a private launch party was held at Veranda on Highland to celebrate and taste Chef Robey’s Papa Menu and the debut of our signature drink the ‘Papa Doble.’ Our Guests were greated with the music of our in house Sunday Jazz Band, The Sweet Licks and welcomed into our beautiful Papa’s Bar with passed samples of Chef Robey’s New Menu. 
Southern Favorites such as Boudin Balls and Shrimp Remoulade grace our Bar Menu, along with our Veranda Burger with a housemade Cayenne Ketchup and Papa’s Caribbean Chicken Sandwhich with a Lime Cilantro Aioli and Grilled Pineapple Pepper Jelly.
Our New Signature Drink, The Papa Doble, was one of Hemingway’s favorites. With White Rum, Grapefruit Juice, Lime Juice and Grenadine, it makes for a wonderfully refreshing drink.
